Baked potatoes and bacon soup .
i recently came up with a, well sort of a nice soup dish which u can eat when its cold and stuff. its basically mixing the right ingredients that would go right on a cold day like potatoes.
all you will need is ; *p/s this serves around 4 good bowls*
-2 baked potatoes
-1 big yellow onion
-2 strips of celery
-a packet of bacon or beef streaky *you can add as much as you like. If you want a stronger taste of bacon then go ahead*
-water *around 800 ml*
-a cup of chicken stock*the instant one would do *
-Roasted garlic*recipe will be below*
-1pc of ginger
-cream
1. wash and peel your potatoes. place them in aluminium foils each and season them well with salt and pepper and drizzle some olive oil on them. place them in an oven to bake till they turn nice and soft. *aprox 160C for 30-40 mins*
2.cut celery and onions into chunks* just roughly will do*
3.slice the bacon into big pieces
4.in a pot, heat up a bit of olive oil or grape seed oil and fry bacon till the fat melts and you get the smell of the bacon. then take the bacon out and leave the oil there
5.add in the onions and celery and cook till aromatic.*u can add a lil butter if u want , if the vege starts to stick or they look like their gonna burn*
6.by now the potatoes should be ready. take them out from the oven and cut them roughly and add them to the pot.
7.prepare the chicken stock and add it in , followed by the water
8.chop up the fried bacon and throw them back in to the pot to boil with the other ingredients .
9.grate the ginger *as needed* and add it in
10. add the Roasted garlic by removing the burnt skin and roughly slicing them up.* the roasted garlic is extremely easy to make. all you have to do is get a close of garlic, place it on a tray, season it with salt and pepper , add dry rosemary and dry basil. chuck it in a toaster or oven for 10-15 mins on high till the garlic cloves are soft and squeshy like.*
11. after the boil, transfer the soup into a blender or use a hand held blender to blitz it into a liquid consistency.
12.bring it back to boil and add about 1/2-1 cup of cream to the soup and season with black pepper and salt according to taste then let it boil for 5 mins .
13. serve on its own or garlic bread.
